Extra Virgin Coconut Oil (EVCO) is a new high-value-added version of virgin coconut oil in health food markets. EVCO has received much attention as the “healthiest oil in the world”, due to its rich amount of medium chain fatty acids, especially 48-53 % of lauric acid that could augment the metabolism, immunity, digestibility, and ensure sound serum lipid profile contributing to the healthy survival.
